Raw Protein Brownies
Serves 12
Ingredients
Base:
- 2 cups Hazelnuts
- 2.5 cups shredded coconut
- 3/4 cup cacao powder
- 4 cups almonds
- 1/4 tsp salt
- 1.5 cups medjool dates
- 1 cup rice malt syrup
- 1 scoop R3 Vanilla Protein Powder
Topping:
- 2 cups 70% Lindt dark chocolate
- 2 cups coconut milk
Method
- Place hazelnuts, coconut, almonds, cacao powder and salt in a high speed blender or food processor and blend
- Add in the medjool dates and rice malt syrup and continue to blend in the food processor until the mixture is sticky
- Pour the mixture into a lined baking tray
- Make the chocolate ganache topping by placing the Lindt dark chocolate and coconut milk into a sauce pan and stir over a medium heat until melted
- Pour the ganache over the baking tray mixture and place in the freezer for one hour, or until set
- Top with hazelnuts, shredded coconut and desiccated coconut
