Peanut Butter Protein Slice

Serves 6-8 Peanut butter protein slice

Ingredients

Base:

  • 1/2 cup Almonds
  • 1/2 cup Cashews
  • 1/4 cup coconut nectar
  • 1/4 cup coconut oil
  • 1/2 cup pitted medjool dates
  • 1 scoop R3 Vanilla Protein Powder

Topping:

  • 1/2 chocolate buckini (Loving Earth brand used)
  • 1 tsp Cinnamon
  • 1/4 cup 100% natural peanut butter

*Optional Chocolate sauce:

  • 3 tbsp cacao powder
  • 3 tbsp coconut oil
  • 3 tbsp coconut nectar

 

Method

  1. Combine all base ingredients into a high speed blender and blend until smooth
  2. While still wet, pour base mixture into an air-tight container and freeze for 1-2 hours
  3. Pour all topping ingredients into a mixing bowl and mix until combined
  4. Remove base mix from freezer and pour topping mix over the frozen base
  5. Place container back into freeze for an additional hour
  6. *optional Drizzle chocolate sauce before serving

* To make recipe vegan friendly, use R3 Vegan Vanilla Protein
