Peanut Butter Protein Slice
Serves 6-8
Ingredients
Base:
- 1/2 cup Almonds
- 1/2 cup Cashews
- 1/4 cup coconut nectar
- 1/4 cup coconut oil
- 1/2 cup pitted medjool dates
- 1 scoop R3 Vanilla Protein Powder
Topping:
- 1/2 chocolate buckini (Loving Earth brand used)
- 1 tsp Cinnamon
- 1/4 cup 100% natural peanut butter
*Optional Chocolate sauce:
- 3 tbsp cacao powder
- 3 tbsp coconut oil
- 3 tbsp coconut nectar
Method
- Combine all base ingredients into a high speed blender and blend until smooth
- While still wet, pour base mixture into an air-tight container and freeze for 1-2 hours
- Pour all topping ingredients into a mixing bowl and mix until combined
- Remove base mix from freezer and pour topping mix over the frozen base
- Place container back into freeze for an additional hour
- *optional Drizzle chocolate sauce before serving
